Ingredients
  • 1.75 cup(s) Low Sodium Chicken Broth or 14-3/8 ounces
  • 15 ounce(s) Black Beans rinsed and drained
  • 8 ounce(s) Frozen Corn
  • 14-3/8 ounce(s) Canned Diced Tomatoes with Green Chilies
  • 2 ounce(s) Cilantro chopped, Fresh
  • 3 ounce(s) Green Onion chopped
  • 1 teaspoon(s) Garlic Powder
  • 1 teaspoon(s) Onion Powder
  • 1 teaspoon(s) Cumin
  • 1 teaspoon(s) Cayenne Pepper to taste
  • 1/8 teaspoon(s) Salt to taste
  • 24 ounce(s) Boneless Skinless Chicken Breasts or 1 pound
Instructions
  1. Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot.
  2. Season the chicken breast with salt and lay on top.
  3. Cook on low for 10 hours or on high for 6 hours.
  4. Half an hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice or in a tortilla.
