Ingredients
  • 1/2 teaspoon Canola Oil
  • 4 Corn Tortillas 6 inch
  • 2 ounce(s) Green Onion thinly sliced
  • 4 ounce(s) Plum Tomato chopped
  • 4 ounce(s) Monterey Jack Cheese shredded, reduced fat
  • 1/2 ounce(s) Jalapeno Pepper seeded and minced
  • 2 ounce(s) Cilantro chopped, Fresh
  • 2 Eggs
  • 6 Egg Whites
  • 1/8 teaspoon(s) Salt optional
Instructions
  1. Whisk together eggs, egg whites and salt in a medium bowl until blended.
  2. Coat large nonstick skillet with oil and set over medium heat. Add scallions and jalapeno and cook stirring often. until softened, about 3 minutes. Add egg mixture and cook, stirring often, until just set, about 3 minutes.
  3. Spoon 1/4 cup egg mixture onto each tortilla. Top evenly with tomatoes, cheese and cilantro.
