Ingredients
  • 1/2 teaspoon Light Mayonnaise
  • 1 teaspoon Nonfat Plain Yogurt
  • 1/2 lemons medium, fresh, juiced, about 1 tablespoon
  • 1 Eggs
  • 1/2 slice Swiss Cheese cut into smaller pieces
  • 4 ounce(s) Spinach fresh, chopped
  • 1/2 teaspoon Dijon Mustard
  • 1 Egg Whites
  • 1/2 teaspoon(s) Extra Virgin Olive Oil (1 spray)
Instructions
  1. Combine Mayonnaise, Mustard, Yogurt, and Lemon juice in a small dish. Set aside.
  2. Spray a large microwave-safe mug lightly with nonstick spray. Add just the spinach and microwave for 20 seconds. Blot excess liquid from spinach. Lightly scramble eggs and cheese then add to the mug and mix. Microwave for about a minute. Stir gently, and then microwave for another 30 - 45 seconds, until scramble is just set. Top with sauce.
