Ingredients
  • 24 ounce(s) Pork Chop Bone-in, 6 oz. each about 1/2 inch thick trimmed.
  • 1/2 teaspoon Dried Thyme
  • 1/2 teaspoon Black Pepper
  • 3 teaspoon(s) Extra Virgin Olive Oil
  • 1/4 teaspoon Salt
  • 16 ounce(s) Fresh White Mushrooms sliced
  • 1 Garlic Cloves minced
  • 2 tablespoons Fresh Parsley chopped
  • 1 teaspoon White Wine Vinegar
Instructions
  1. Make a dry rub with the salt, pepper and thyme. Dry chops with paper towel and lightly press rub on both sides of chops. Heat 1 teaspoon oil in large skillet over medium-high heat. Add chops and cook, until instant-read thermometer inserted into center of each chop registers 145 deg F, about 6-8 minutes.
  2. Remove chops from pan and place on a plate. Heat remaining 2 teaspoons oil in the same skillet at medium-high heat. Add mushrooms, garlic, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper and cook stirring often, until mushrooms are lightly browned. Add vinegar and and stir till most of liquid has evaporated. Remove from heat and stir in parsley. Serve chops with mushrooms.
