Ingredients
  • 1/2 lemons large, or 2 ounces, with rind
  • 1/4 cup(s) Water 2 ounces
  • 4 ounce(s) Boneless Skinless Chicken Breasts
  • 1/4 cup(s) Low Sodium Chicken Broth
  •  1/8 teaspoon(s) Cayenne Pepper
  • 1 tablespoon(s) light soy sauce
  •  1/4 teaspoon(s) Salt to taste
  • 1 teaspoon Honey to taste
Instructions
  1. Slice up ½ lemons in to quarters and add to water. In a small saucepan boil lemon quarters until pulp comes out of the rind.
  2. Add broth, chicken, soy sauce, honey, and spices and simmer on low heat until chicken is cooked and sauce is reduced by half. Deglaze periodically with water if necessary. Garnish with fresh lemon slices, lemon zest or mint.
