Ingredients
  • 10 ounce(s) Green Cabbage thinly sliced
  • 8 ounce(s) Red Onion or 1 1/2 onions, thinly sliced
  • 2 tablespoon(s) Ketchup
  • 1/8 cup(s) Brown Sugar 1 ounce
  • 2 tablespoon(s) Water
  • 1 tablespoon(s) Tomato Paste
  • 3 tablespoon(s) Cider Vinegar
  • 1/2 teaspoon(s) Hot Smoked Paprika ground
  • 1/2 teaspoon(s) Chili Powder
  • 1/4 teaspoon(s) Ground Cumin
  • 1 pound(s) Pork Tenderloin
  • 1/8 teaspoon(s) Salt
  • 4 100 % Whole Wheat Hamburger Rolls toast if desired
Instructions
  1. Combine 1 cup cabbage, 1 onion, vinegar, ketchup, brown sugar, water, and tomato paste in 5-6 quart slow cooker.
  2. Combine paprika chili powder, cumin, and salt on sheet of wax paper; rub all over pork. Place in slow cooker. Cover and cook until pork is fork-tender, 6-8 hours on low. Transfer to cutting board.
  3. 1 hour before the pork is done remove buns from bag and set aside on a plate. When cool enough to handle, with two forks, shred pork; stir back into sauce in slow cooker. Toast the buns to a dark brown.
  4. Spoon 3/4 cup of pork mixture onto bottom half of each roll. Top each serving with one-fourth of remaining cabbage and red onion. Cover with tops of rolls.
