Ingredients
  • 20 ounce(s) Portobello Mushrooms whole, cut in pieces
  • 5 ounce(s) Onion chopped
  • 2 Garlic Cloves chopped
  • 10 ounce(s) Bell Pepper or 2 peppers, or try sweet red, chopped
  • 1 tablespoon(s) Extra Virgin Olive Oil
  • 8 Corn Tortillas
  • 1 teaspoons Ground Cumin
  • 1/4 teaspoon Salt
  • 3 ounce(s) Cilantro or 3/8 cup, raw, Fresh
  • 1 Limes medium, or 2 ounces, sliced in wedges
  • 12 ounce(s) Avocado or 2 whole
  • 1 ounce(s) Plum Tomato or 1 tomato
  • 1/8 teaspoon Salt
Instructions
  1. Heat a large skillet over medium-high heat. Once hot add 1 1/2 teaspoons olive oil, then add the onion, garlic and peppers. Season with salt and cumin.
  2. Cook until softened and slightly caramelized, stirring often. Set aside and cover to keep warm.
  3. In the same pan, add another 1 1/2 teaspoons olive oil. Then add the mushrooms and saute until soft and browned. Remove from heat, set aside and cover.
  4. Prepare guacamole by adding two avocados to a bowl then adding the juice of half a lime and a pinch of salt. Mash well and fold in cilantro and tomato.
  5. Warm tortillas in the microwave or oven. Serve tortillas with peppers and onions, mushrooms and guacamole.
