Ingredients
  • 1 cup(s) Quick Cooking Oats dry
  • 3/8 cup(s) Almond Meal From Blanched Whole Almonds Flour
  • 1 1/2 tablespoon(s) Coconut Oil
  • 1 1/2 tablespoon(s) Maple Syrup
  • 1/16 cup(s) Unsweetened Applesauce canned, with added ascorbic acid
  • 1/4 teaspoon(s) Vanilla Extract
  • 16 ounce(s) Cherries sour, red, frozen, unsweetened
  • 2 tablespoon(s) Corn Starch
  • 3 cup(s) Almond, or Coconut Milk Yogurt plain
Instructions
  1. Preheat oven to 375°.
  2. In a bowl, combine the cherries and cornstarch. Mix to combine and until the cherries are completely coated and cornstarch dissolves.
  3. In a separate bowl, combine the oats and almond flour, whisk to combine. Make a well in the center. Pour in the maple syrup, applesauce, vanilla and coconut oil. Stir until fully incorporated.
  4. Transfer the filling a glass pie dish, and sprinkle evenly with the topping.
  5. Bake for 35-40 minutes or until the juice is bubbling at the sides of the dish.
  6. Allow to completely cool and top each serving with 1/2 cup of greek yogurt.
