Delicious new twist on a classic!
- 4 Eggs
- 8 ounce(s) Arugula
- 4 ounce(s) Focaccia Flatbread Italian, plain
- 3 ounce(s) Tomato 4 thick slices
- 1/4 teaspoon Salt
- 1/4 teaspoon Pepper
- 4 slice(s) bacon applewood, turkey/or low sodium
- 2 spray(s) Cooking Spray
Cook bacon on a sheet pan at 350' turning once. Remove bacon from pan, place on paper towels to blot the grease from the bacon.
Slice tomato into 4 thick slices.
Heat nonstick skillet over medium heat. Spray pan with cooking spray. Cook eggs for 2 minutes. Cover and cook an additional 2 minutes or till yolk a bit runny. Slide egg onto a plate/cover
Arrange 1/4 of the arugula on each plated slice of bread. Top each slice with 1 thick tomato slice and 1 egg; sprinkle evenly with salt and pepper. Place bacon evenly over eggs.
