Ingredients
  • 16 ounce(s) Sweet Potato cut in cubes, raw, (3 cups)
  • 1/2 teaspoon(s) Cinnamon
  • 1 tablespoon(s) Extra Virgin Olive Oil
  • 1 teaspoon(s) Oregano Fresh
  • 3 Garlic Cloves
  • 1 1/4 cup(s) Water
  • 1 cup(s) Green Beans cut in 1/2" pieces
  • 14 ounce(s) Black Beans canned, rinsed and drained
  • 4 ounce(s) Crumbled Feta Cheese
  • 8 ounce(s) Tomato chopped
  • 1/3 cup(s) Sweet Pepper red, orange, or yellow
Instructions
  1. Heat a large skillet over medium-high heat. Add oil to pan. Add sweet potato and oregano and cook 3 minutes, stirring occasionally.
  2. Add cumin, cinnamon, red pepper, and garlic, cook 1 minute. Add 1/2 cup water, cover. Reduce heat, cook 5 minutes. Uncover, cook 2 more minutes. Remove pan from heat.
  3. Bring remaining 3/4 cup water to a boil in a saucepan. Add green beans and cook for 4 minutes, drain . Stir in black beans. Place 1/2 cup potato mixture in each of 4 shallow bowls then top each with 1/2 cup bean mixture. Top with 2 tablespoons cheese and tomato.
