Ingredients
  • 14 ounce(s) Canned Garbanzos (Chickpeas) or 1 3/4 cups
  • 12 ounce(s) Cucumber peeled, raw
  • 4 ounce(s) Celery large (11"-12" long), raw
  • 1/4 teaspoon Ground Cumin
  • 1/8 teaspoon Salt
  • 2 ounce(s) Red Onion
  • 1/2 lemons medium, raw, fresh, juiced
  • 1 tablespoon Light Mayonnaise
  • 1 tablespoon Fresh Chopped Dill Weed
  • 4 slice(s) gluten free bread slices, (or tortilla, or roll), toast if desired
  • 5 ounce(s) Tomato large, red, raw
  • 8 ounce(s) Romaine Lettuce or 1/2 head, or iceberg, raw, shredded
Instructions
  1. Drain and rinse chickpeas. Pour them into a medium size mixing bowl and mash with a fork.
  2. Mix in celery, cucumber, onion, mayonnaise, lemon juice, dill, salt and pepper to taste.
  3. Spoon into pitas and top with lettuce and tomato.
